Single Vineyard Close Planted Chardonnay

Sinapius Single Vineyard Close Planted Chardonnay is sourced from estate grown high density plantings. They produce tiny yields of fruit: less than one kilogram per vine.
The grapes are handpicked and whole bunch pressed to tank. After lightly settling overnight without chilling, the juice is transferred to barrel with most of its solids for wild yeast fermentation.
Full malolactic fermentation and typically 12 months of maturation follow. In some vintages a fraction transfers to tank to age. The wine is then blended, settled in tank for natural clarification and bottled unfined and unfiltered.
Pale yellow, Sinapius Single Vineyard Close Planted Chardonnay has citrus and white fruit flavours with chalky texture and minerality. Cellaring potential is 10 years.
